Cooking wild salmon with Rae - Episode 1

Mark's Family's recipe 

Soak plank in water for one hour before using.

For one, 1.3 -pound Bristol Bay Sockeye filet:

  • Fire grill on medium-high

  • In a small saucepan, melt 1 stick butter on low heat

  • Add 1/3 cup yellow mustard (or spicy brown if feeling adventurous)

  • Add pinch of salt and fresh ground peeper to taste

  • Whisk thoroughly while adding 1/3 cup fresh squeezed lemon juice

  • Continue whisking until emulsified

  • Brush over entire filet 

  • Place filet skin-side down on grill

  • Reduce heat to medium – (don’t cover salmon with foil)  

  • Place cover back on grill

  • Periodically continue brushing sauce on filet until all sauce is gone.

  • Cook until spatula just, easily bisects all the way through middle of salmon (don’t overcook – check at 5 minutes)

  • With a spatula, bisect the filet into as many pieces as desired then scrape the fish directly off the salmon skin – leaving it behind on the grill

  • Let fish rest under foil tent for 2 minutes

Serve and dig in!

Wild Smoked Salmon Spread with Bagels

Yummy for breakfast and a great snack!

What you need:

  • 7 – 8 oz WILD smoked salmon lox

  • 8 oz brick (1 cup) cream cheese, softened 1⁄4 cup sour cream OR 3 tbsp cream

  • 1 tsp dill fresh is best but dried is fine Juice of 1⁄2 a lemon

  • Salt & Pepper

What to do:

  • Cream together the cream cheese and sour cream (or cream) in a food processor, until smooth. Add the salmon and lemon until throughly blended and smooth.

  • Add salt and pepper to taste then mix in dill for six pulses.

Don’t have a food processor?
It’s OK! Make sure your cream cheese is softened (not melted) and whisk in the sour cream until well blended. Chop up the lox/salmon until it’s very small and mix into the cream cheese spread. Add your dill, lemon, salt & Pepper to taste!

  • Toast a bagel, or English Muffin, and spread your delicious SAVE BRISTOL BAY salmon spread on your toast or bagel for a yummy breakfast, lunch or dinner!

  • Top with a tomato or some seasoning.

Crisp bread is also delicious with salmon spread!
